The picture does not do this recipe justice. In fact, I hesitated posting a picture at all because who wants to look at a pork roast? Trust me though, it is easy to make and delicious to eat. This recipe makes me love my slow cooker all the more.
Ingredients:
One pork roast, 3-5 lbs
1 cup balsamic vinegar
1/4 cup honey
2 teaspoons dried rosemary
5-10 sprigs fresh thyme
2 bay leaves
1 teaspoon salt
1/4 teaspoon black pepper
Directions:
Place pork roast in slow cooker and top with ingredients. Cook on low for 6-8 hours, or high for 4-6 hours (depending on the size of the roast).
Remove the cooked roast, cover and keep warm. Pour the accumulated liquid into a saucepan and bring to a boil, letting it reduce by half. Slice the roast and serve with the sauce.
