RECIPE: BALSAMIC & LIME VINAIGRETTE
We have a fresh salad with almost every meal because it's such an easy way to make sure we get our greens and veggies. This simple dressing is currently my favourite (it's another winning recipe from Gwyneth Paltrow's cookbook). It's sweet and tangy and can be made in a matter of minutes.
2 tablespoons balsamic vinegar
2 tablespoons agave nectar or honey
1 tablespoon fresh lime juice
1/4 cup plus 2 tablespoons olive oil
Freshly ground black pepper
Whisk the vinegar, agave nectar and lime juice together in a bowl. Slowly whisk in the olive oil and season to taste with salt and pepper.
Save your mason jars to keep the extra dressing as it will last three-to-four days.
